Fredericton’s Beloved Bakery Expands with Unique Korean-Style Bagels
Fredericton, NB – After three successful years at Boulangerie Seoul, owners Seul Ah Jang and Seungho Kim are set to bring their culinary magic to downtown Fredericton with the opening of Bagel Seoul this September. The new bakery, located in the former Chess Piece café on Queen Street, aims to introduce the community to the delightful world of Korean-style bagels.
Jang and Kim, affectionately known as Sarah and Leo, have cultivated a loyal customer base at their Woodstock Road location, where patrons return weekly for their delectable French-Korean pastries. “We have been growing steadily and received tremendous support from our community,” Jang expressed. “We are so happy to be a part of Fredericton.”
The decision to expand downtown was driven by the needs of local office workers who often travel long distances for a quick snack or lunch. “We wanted to find a location closer to them for convenience,” Jang added.
Food influencer Alex Kwok, known as the East Coast Eater, is among the many fans eagerly anticipating the new venture. “I squealed like a child when I heard about Bagel Seoul,” he said. “Leo and Sarah put so much work into everything they do. They’re incredible.”
Bagel Seoul promises to offer a unique twist on the traditional bagel. Unlike their Canadian counterparts, which tend to be denser and chewier, Korean-style bagels are known for their softness and fluffiness. “They’re so soft that you can enjoy one without even needing water or milk,” Kim explained.
The couple’s journey to this new location has been a labor of love. After years of searching for the perfect commercial space, they finally secured the former Chess Piece location in early July. “We know that Chess Piece has been loved by the Fredericton community, and we want to continue that love and growth,” Jang said.
The renovation process has been intense, with the couple dedicating every free hour to prepare for the grand opening. Kim, who underwent emergency surgery for acute appendicitis during the renovations, returned to work shortly after, fueled by the excitement of introducing their new offerings to the community. “Seeing our customers smile and knowing we’ve brought a little happiness to their day is the most rewarding part for me,” he shared.
Local residents are equally enthusiastic about the new addition. Andrew Titus, a frequent visitor to Boulangerie Seoul, expressed his excitement for Bagel Seoul’s convenient downtown location. “It’s great to see something going in that will keep the downtown vibrant,” he said.
Jeremy MacFarlane, owner of the Tipsy Muse Cafe, echoed this sentiment, noting the competitive nature of the downtown café scene. “It keeps you sharp and on top of your game,” he said, looking forward to welcoming Bagel Seoul to the neighborhood.
For regulars like Winnie Savoie, who visits Boulangerie Seoul multiple times a week, the couple’s success is no surprise. “They’re savvy. Very savvy kids,” she remarked, praising Kim’s dedication to quality. “Everything Seungho does is magic.”
As the countdown to the opening day begins, Jang and Kim remain focused on their mission: to bring joy through their baked goods. With a growing customer base and a commitment to quality, Bagel Seoul is poised to become a beloved fixture in Fredericton’s downtown scene.
